Meet David Frenkiel and Luise Vindahl,?recipe writers, food bloggers?and?culinary app developers?living in Stockholm, Sweden. David is a long time vegetarian while Luise is passionate about nutrition. Together they create some of the best vegetarian recipes I?ve ever cooked at home. Their food is colorful, flavorful and guilt-free ? it?s no surprise I?ve become a fan from the day I discovered their blog! They recently released iPad and iPhone apps, which feature 48 exclusive recipes and?their breaktaking photography, sure to make you long for wholesome meals. They are also working on their first cookbook, which will be released in the spring of 2013.?Here?s Ho Chi Minh City, Vietnam, in their own words.
My Edible City
Ho Chi Minh City.?We travelled around the world for six months in 2010/ 2011. Of all the places we went to, we loved Saigon, Vietnam the most. Elsa was 10 months old when we arrived. The main reason why we chose Vietnam was because of its food. But we were surprised how much more than just spring noodles Saigon had to offer!?Cool cafes, fantastic restaurants, interesting (and horrible) museums, fashionably dressed vietnamese people (who loved babies too), cooking classes and not to mention wild traffic. Totally crazy would be a huge understatement. There are motorbikes?everywhere. They usually don?t stop for red light and they drive in every direction possible. Even the sidewalks are occupied by parked motorbikes.
We fell in love with Saigon?s street food. The small noodle kitchens that were on every street corner. And the women who sold desserts from the back of their bikes ??sweet sticky rice with soy beans, chick peas and grated coconut. Very sweet and very yummy!?We also loved hanging out in the parks of Saigon, the atmosphere was amazing as we were surrounded by young vietnamese students. And the fact that we could drink freshly squeezed cane juice and eat?lychee,?dragon fruit, fresh coconut and?pomelo?every day, didn?t make us love the city less!
My Favorite Dish
Vegetarian Pho.?Ph? is the Vietnamese rice noodle soup with lots of fresh herbs, lime, chili and big chunks of tofu and vegetables. It can be a little bit tricky finding vegetarian versions, since most of them are made on chicken or beef broth, but we found a few favorite places. In Vietnam they eat Ph? for breakfast. Its a wonderful way to start the day, full of flavors. But after we came home we stopped making Ph? for breakfast and instead eat it as a dinner.
