(Love!) We couldn't resist sharing these recipes that together ring in at under 500 calories, and pack in tons of veggies, supergrains, and even satisfy the carbtastic craving.
Turkey Quinoa Meatloaf with Sweet Potato Wedges
Yield: 8 servings
Turkey Quinoa Meatloaf
Ingredients
1 ? Tbsp. safflower oil
? cup white onion, finely diced
? cup carrots, finely diced
? cup celery, finely diced
? cup red pepper, finely diced
? cup yellow pepper, finely diced
? cup orange pepper, finely diced
1 cup kale, blanched, shocked and finely diced
2 Tbsp. Italian parsley, finely chopped
1 pound white meat turkey, ground
2 cups quinoa, cooked
Sea salt and pepper, to taste
? cup barbeque sauce
Directions
1. Preheat oven to 375 degrees.
2. In a large saut? pan, sweat onions in safflower oil, until translucent. Add carrots, celery and peppers and continue cooking until soft. Set aside and let cool.
3. In a large mixing bowl, combine turkey, quinoa, cooked vegetables, kale and parsley. Season with sea salt and pepper. Mix by hand until thoroughly combined.
4. Shape mixture into two loaves, 9 x 4 inches.
5. Place on a parchment lined baking sheet.
6. Brush with your favorite BBQ sauce and bake for 45 minutes.
7. Let cool. Slice and enjoy!
Sweet & Spicy Sweet Potato Wedges
Yield: 6-8 servings
Prep time: 10 minutes
Cook time: 30 minutes
Ingredients
2 pounds sweet potatoes, about 3 large potatoes
? cup coconut oil
2 Tbsp. coconut sugar
1 Tbsp. Sea Salt
1 Tbsp. Chipotle Powder
Directions
1. Preheat oven to 450 degrees.
2. Scrub the potatoes well. Cut the potatoes in half lengthwise and then, if they are very long, in half crosswise. Cut each piece into wedges.
3. Put the sweet potatoes into a large bowl and add the oil. Mix well to combine. Sprinkle with salt, sugar and spices Use your hands to mix well, so all pieces are coated with oil and spices.
4. Spread the sweet potatoes out in a single layer on a baking sheet; the oil they are coated with should keep them from sticking to the pan.
5. Bake for a total of 25 to 30 minutes. After the first 15 minutes, remove the baking sheet from the oven and turn over all of the sweet potato wedges. Return to the oven and bake for another 10-15 minutes, or until they are well browned. Let cool for 5 minutes before serving.
